Binging with Babish: Pasta Aglio e Olio from "Chef"


What dish can make any man or woman ache for the touch of Jon Favreau? Pasta Aglio e Olio is the dreamy midnight snack that lives up to its porny portrayal in the foodie-comedy-drama "Chef". Recipe below!

RECIPE

*Ingredients*

1/2 head garlic, separated and peeled

1 bunch parsley, rinsed

1/2 cup good quality olive oil

1 tsp red pepper flakes

1/2 lb dry linguine

1/2 lemon

*Method*

Heavily salt a large pot of water, and bring to a boil. Cook pasta to al dente while completing the steps below.

Slice the garlic cloves thinly, and set aside. Pick the parsley leaves from their stems, and finely chop. Add olive oil to a large sauté pan, and heat over medium flame until shimmering. Add sliced garlic, stirring constantly, until garlic is barely toasted. Add the red pepper flake and remove from heat.

Add the pasta, drained, with about 1/4 cup reserved pasta cooking water. Add lemon juice and parsley, and toss to combine. Season for salt and pepper, and serve.

Here's an actually good garlic peeling trick. Take the unpeeled clove, lay the base of the blade of a knife flat across the clove. Use the hand not holding the knife steady to deliver a light palm strike to the knife, barely crushing the clove. After that, peeling is super easy. Whole skin of the clove pretty much comes off in one go. I think Iearned that trick from Micheal Smith on Chef at Home

very good job on the carbonara, here..almost! few comments:
1) dont slice garlic, just break it down with a punch on the counter and trow it in. It will release the aroma (belive me, great difference), without being "too much". and can also be removed afterwards.
2) one or two anchoives are a great add-on
3) fresh red chili pepper (actually the dish is aglio olio e peperoncino)

PS the garlic track does work you just have to use a container with hard metal or glass surface on the interior and you have to shake it for about a minute and you'll get about 90% of them peeled Great for if you're feeling a ton of garlic

Tried this dish, and frankly I fucked it up.
Everything else seemed to be fine, got confused on how much a single BUNCH of parsley is, so I had to just eyeball it.
Put garlic in, forgot to read instructions, and toasted the garlic to a brown color.
Was stupid and dicked around with the pasta for FAR too long,
The order of what I did was just out of whack.
The end result was a oily mess and a twinge of what tasted to be burnt garlic.
Evidently it sucked as a result of my bad cooking.
Also had to substitute Red Pepper FLAKES with ground red pepper.

You should wait to salt the water until after its started boiling. Otherwise, the salt can settle at the bottom and scour the bottom of your pots. The boiling keeps it circulating until well dissolved.

If you crush the garlic before putting it in the container to shake, it will definitely help peel all the skin off for you! If you have to slice it thin though, obviously this won't work.

I made this a few times before realizing a few mistakes:

-do not toast the garlic too much, literally give the oil 20 seconds with the flame put the garlic in then and turn the flame right off.
-slice the garlic when it's totally whole and to get wide slices which has great texture.

-most important thing is that the garlic should still be in it's sticky white phase and just get that nice meeting with the oil and the heat to make the garlic at the right texture.

If you can see in the actual thing, the garlic slices are completely brown which makes it, if you don't know cooking - totally BITTER especially in such a simple recipe where the garlic is not mixed in with anything like tomatoes etc.

Anyway i loved this video and all the other videos in the channel you're really great i just wanted to point out your mistakes

When peeling Garlic, I like the method where you cover the clove with the flat of the blade, give it a decent tap which loosens the skin from the entirety of the clove, peel in a second job done.

Really an underrated dish, and so quick and easy to make! Because I don't like parsley too much I always use some spinach. Another variation I like is to add some (half)dried tomatoes. Buon appetito!

don't use tupperware to peel the garlic, they are two soft, i use a 2 cup Pyrex dish and a bowel that fits over the end, and shake the shit out of it, and it does skin the garlic.
